Frighteningly Good for Halloween: Spooky Velvet Cake

Leave your guests screaming — er, for more — at your Halloween party this year by serving up a blood-curdling spooky red velvet cake from Daisy Cakes.

The company name will be immediately familiar to fans of “Shark Tank.” Daisy Cakes’s creator, home baker Kim “Daisy” Nelson, scored a deal with veteran shark Barbara Corcoran to go national with her brand, which has become a household name in the realm of baked goods.

What sets Daisy Cakes apart from other mail-order competitors is that the dry ingredients in the cakes continue to be sifted by hand, and no shortcuts are taken with the ingredients. The red velvet cake as a case in point is made exclusively of unbleached all-purpose flour, sugar, butter, eggs, whole milk, baking powder, baking soda, salt, vanilla extract, and vinegar. No preservatives or artificial flavors get anywhere near Nelson’s creations.

Our tasting panel had an opportunity recently to sample another of her wares, her lemon cake. Like all Daisy Cakes, the cake is four stories high and arrives frozen to lock in added freshness. We found the flavor to be bright and citrusy, the texture delicate and moist. The icing impressed some of our tasters as a tad on the sweet side, but overall the cake earned high marks.
