Yesterday, June 3, marked the opening of a new addition to the Brooklyn dining scene. Its name is Pig Beach, and it promises to deliver top-drawer BBQ in a casual outdoor comfort food experience in the Gowanus section.
The restaurant which will be run as a pop-up combines the considerable talents of two award-winning BBQ competitive teams: Salty Rinse BBQ, named runner-up in the whole hog competition at the World Championship of BBQ in Memphis last month, and Ribdiculous Bar-B-Krewe, which finished second in the ancillary exotic category.
Overseeing the kitchen at Pig Beach will be Salty Rinse’s Rob Shawger. He will be ably abetted by Ribdiculous Bar-B-Krewe’s Shane McBride, who also functions as executive chef at Manhattan’s Balthazar, Cherche Midi, and Schiller’s; Salty Rinse’s Ed McFarland, executive chef and owner of Ed’s Lobster Bar in SoHo; and Matt Abdoo, chef de cuisine at Del Posto.
The menu will feature baby back ribs, smoked short rib chili, a signature Pig Beach burger and sweet pickles.
The restaurant will be open Tuesdays to Thursdays from 3 p.m. to 10 p.m., Fridays until midnight, Saturdays from 11 a.m. to midnight, and Sundays from 11 a.m. to 10 p.m., weather permitting.
