Have you checked the back of your closets lately to see if someone opened a high-end sushi counter there? It’s unlikely you will, but don’t be surprised if you do. High-end omakases are turning up in some pretty unlikely locations these days these days.

Like the underground vaults at Saks Fifth Avenue. If you’re picturing filth and rat infestation, you’re way off base. The vaults, or more specifically an area called the Cut, is the high-end department store’s “ultimate luxury destination for high fine jewelry and watches.”

It is also where you’ll find Chef Daniel Kim (Sushi by Bou) plying his trade at a six-seat counter called Hoseki (which fittingly translates to “jewel” in Japanese). The 12-course omakase carries a a $95 price tag. A selection of à la carte hand rolls is also available at $35, $40, and $70.

Hoseki is open from noon to 4 p.m.
