From June 25 to June 29, Yuu Shimano, executive chef and owner of Restaurant Yuu, voted best in America by the Robb Report, will be traveling to Japan. In his absence he has turned over operations of the restaurant to his team of well-trained chefs. And what will they be cooking up while the boss is in Asia?

They will be transforming Restaurant Yuu into Bistro Yuu. They will not only overhaul the menu from top to bottom but will be slashing prices. The usual tasting menu price of $250 for 18 courses will be shelved in favor of a $95 three-course menu complete with the likes of steak tartare, roasted duck breast, and chocolate tarte.

A five-course dessert tasting menu with a tea pairing option priced at $120 a person will also be offered.
