Hyun (reviewed here), a K-town restaurant that specializes in the prized A-5 grade of wagyu beef, has opened the city’s first butcher shop dedicated to the impossibly tender, heavily marbled cuts of meat.
Called The HYUN Premium Butcher Shop, the store imports whole boneless cattle from Japan and butchers the primal cuts in house. Jae and his team of skilled butchers package the beef on-site, offering it for retail, wholesale, and e-commerce.
To ensure that the store offers the highest quality products to his clientele at the most approachable price points, Jae collaborates closely with cattle farmers from various Japanese prefectures, presenting a new region each month.
At the center of the shop is an extended counter that houses “the HYUN Collection,” where customers are not just shoppers but curators of their culinary experience for gifting. They can handpick their favorite cuts, which are then beautifully wrapped in bojagi, a traditional Korean form of gift wrapping in which the selected cuts are nestled in wooden boxes that are then wrapped in colorful silk fabrics and embellished with decorative tassels.
Beef this special doesn’t come cheaply, as you well may imagine. Filet Mignon, the top-end item, for example, sells for $68 the half pound.
