The answer is actually simpler than you know, and it works every time. The secret is to insert a small ice cube in the center of each burger. (To get ice cubes of the needed size, fill your ice cube tray halfway up.)
That’s all there is to it. As the patty cooks, the ice melts, not only adding moisture to the meat but ensuring that the center takes longer to heat through and, thus, remains rare and juicy. And don’t worry about the edges overcooking. Instead they will be delightfully crisp.
