Preserve owner Paul Milhailides and Chef David Burke

For a limited time, David Burke Tavern (reviewed here) is offering two nightly special dishes — an appetizer and a main course — based on pheasant, the world’s most popular game bird:

  • The appetizer, billed as “pheasant foie gras dumpling l’orange,” is flavored with cumin, citrus, celery root, and sage. The item is priced at $25.
  • The main course is roast pheasant with wild mushroom risotto, cipollini, delicata squash, Asian pear, and black truffle. The cost is $46.

The restaurant’s regular à la carte and prix fixe menus are also available.

For inspiration for the two “Pheasant Fest” dishes, Chef David Burke participated in a hunt at Rhode Island’s The Preserve Sporting Club & Resort on pheasant season’s opening day in that state, Oct. 19. The property partnered with him to celebrate the start of the season for a select group of shooters for whom Burke crafted an exclusive game-centric post-hunt brunch.

Then, in keeping with British tradition, Burke and the club’s owner, Paul Milhailides, drove some of the hunt’s bounty to the Tavern in New York in a gesture that mimicked the United Kingdom’s Great Grouse Race. The annual event is a competition among London restaurants to serve the first bird on the Aug. 12 opening of grouse season.

For now Pheasant Fest at David Burke Tavern runs through Nov. 5 with the two pheasant dishes available nightly, but inquire: The specials may be extended owing to their popularity.
