Hyun (reviewed here), a K-town restaurant that specializes in the prized A5 grade of wagyu beef, has added a three-course tasting menu priced at $159 per person. The first course delivers samplings of 12 daily cuts of beef, all butchered in-house and cooked tableside. Next by way of contrast comes a section of short rib that has been permitted to marinate 48-hours in a mixture of sugar, honey, and Korean apples and pears.
Accompaniments are à la carte, but it would be a mistake to gloss over them. The sot-bap, pot-cooked rice topped with sea urchin and fresh truffle, is transporting.
As part of the restaurant experience, guests are assigned a personalized server that provides one-on-one service throughout the meal — a function not unlike that of captains in French restaurants in New York’s golden era of haute gastronomy.
