On Dec. 19, the restaurant 8282, which is noted for its playful riffs on Korean fare, will provide a stage for the Filipino-inspired stylings of Chef Kevin Dumlao Cardenas (Eleven Madison Park, Oxalis). The five-course menu will be paired with cocktails created especially for the occasion by 8282’s mixologist, Katrina Sobredilla.

The dinner will open with mango and bagoong, a dish that juxtaposes the slight bitterness of young mango against the saltiness of fermented shrimp. Crispy pork belly (lechon liempo) served with garlic fried rice, the Filipino condiment known as “all-purpose sauce,” and pickles will also be on the menu, as will a dessert of mango float: an icebox cake of sorts made of the aforementioned fruit, graham crackers, condensed milk, and toasted coconut.
