New York restaurateur and award-winning chef David Burke has a Valentine’s Day gift for you. It is a video of a cooking class that he produced with his sidekick Lefto, who also serves as his sous chef when he is cooking at home.
The video is the latest in a series that arose, like so much else these days, out of pandemic-driven ennui. During the early weeks of the lockdown, alone in his rather large house, Chef Burke remembered a hand puppet that had been a gift from a former girlfriend. With no one else in the house to talk to, he rescued Lefto from the back of a closet and the two set to work on the first of their demos.
The episode that follows instructs on the making of a chocolate ganache, which is then used to coat chocolate-covered strawberries and donuts.
