Peking Turkey (Credit: RedFarm)

Let’s face facts. Turkey, even when cooked meticulously (which is seldom the case), is far from the most exciting food. No wonder Benjamin Franklin rejected it as the national bird, choosing the bald eagle in its place.

Fortunately, one New York restaurant, RedFarm (with outposts on the Upper West Side and in the West Village) has unlocked the secret for making roast turkey taste like its high-end culinary cousin, Peking duck. The bird is roasted to crisp-skinned perfection, served with homemade pancakes, hoisin-garlic gravy, peanut-sesame and cranberry sauces.

A whole Peking turkey dinner which feeds 6 to 8 people, sells for $495. The restaurant offers options for dining in from noon to 2 p.m. and takeout from 3 p.m. to 9 p.m.  If you’re planning to order, or reserve, you’d better hurry. The birds go fast.
